I was planning on writing health articles. But Timetraveler says the competition is tough in the area. My husband is an avid organic gardener and I could easily write on that. I am working on one now. PaulGoodman67 says his DenGarden is doing well.
Gardening is also competitive. Have you looked at how many gardening sites there are? Not trying to discourage you. Just want you know what you are getting into.
You can write on any topic you wish, but need to understand that some topics are besotted with articles, many of which are written by pros on their fields. For example, it's pretty hard to compete with the Americian Caner Society if you want to write about any type of cancer! Also, writing online is quite different than writing for books, magazines, etc. You need to learn about Search Engine Optimization, how to use keywords, and more. It takes time and the learning curve is long, but it also provides a great deal of satisfaction once you "get it". You really should read the info in the learning center and also read articles from some of our more successful writers so that you can get a feel for what you'll need to do.
If you go with organic gardening I suggest including a good bit of focus on regional gardening.
I understand writing to be competitive period. There are a lot of aspiring writers out there. When I was younger I tried for 17 years to break into the paying market, but never managed to. But for 6 years I worked eBay now and have done better than a lot of people. I figure if I hang in there with your peoples help on the forum I can eventually get this figured out. I did not get ebay figured out overnite. It took a while. And I figure this will too. This type of thing is a continual learning process. It keeps my mind young.
During that 17 years when I was younger I did have quite a few articles published for free in smaller magazines. I got a big kick out of it.
The problem with revenue earning from online writing is that it's not all about writing well. A major chunk of it is also how well you play the SEO game.
There are many terribly written, fluffy articles out there. But some of these do well because the people behind them know how to play the SEO game. And to a lesser extent, the social media game as well. Or they got lucky.
If you can go quite niche on your topics and answer questions that help many people, then you can approach any subject. So if your organic gardening focuses, lets say on soft fruit and the problems faced by growers, you might do well. You could go even more niche and just concentrate on raspberries. Become an expert. That's just an example, but you see what I'm getting at.
Write about what you love writing about is my motto. Then, you work in the structure for the Internet.
I know a little bit about SEO now but not much. For example I changed the name of my article on the black man from Get Out of Here Whitey to Militant Black Changed to Devoted Christian because of SEO. But my main focus at the moment is 10 quality articles and apply for Adsense and Hubpages ads. Then I will focus more on SEO. I understand that is a huge subject.
Personally, I never worry too much about SEO. Search engines are focused on more naturally written articles these days. Write for your reader, not for the search engines.

Another factor in search now too is the fact that Google will fill the top space with the answer so people don't even have to open an article to get the information they are seeking. When checking out keywords it may be a good idea to check out what comes up in Google and alter your keywords using it.
After reading all of your recommendations, I am thinking not to focus merely one one topic but have a little variety. And don't focus so much on SEO that I loose the natural flow of the writing.
I refuse to have anything to do with SEO for two reasons.
One, I researched it and found it to be utterly incomprehensible
Two, I refuse to have my writing style, such as it is, tampered with in order to satisfy the demands of an inanimate algorithm. Let the words flow and damn the code.
Exactly. I used to worry too much on SEO and search engines that I quit enjoying my writing. Now I’m back to writing what I love for me.
