I am having a terrible while attempting to fix up the earnngs section.
For example, what is a tag ID for Google analytics? Just to name a few.
Kindly tell me why earnings so difficult.

Can't remember all the details because it's literally been 8 years since I set it up for myself, but the main thing you need is the HP Ad Program activated, that's the actual program with which you earn money. As far as Analytics goes I think you get your ID number from Analytics and then plug it in here at the Earnings Settings, but I thought there was a way to do it automatically from here.

It's very simple. You activate the HubPages Ad program and you link your Paypal email address to your account. That's it.
Google Analytics is separate and nothing to do with your earnings. I don't even use it.
Google Analytics codes are generated once you've created your own Google Analytics account and have them both connected to each other. It generates automatically and easily once you've made and connected your Google Analytics account.
I don't know if there's a place or function here where you can upload/put your phone number, or maybe if I haven't looked at it yet. As much to that, you can just connect your social media accounts (Facebook, LinkedIn, etc) whenever you edit your account in the account settings.
Just to reiterate... Google Analytics is nothing to do with setting up your earnings. All it does is provide data on your traffic.
Activate the HubPages ad program. Put in the email that is connected to your Paypal account and you are done.

Are ad settings totally controlled by HubPages or do the settings in my Adsense account have a bearing on what will be displayed? If so, is it a good idea to select categories relevant to a niche site?
