I saw that it was okay to have more than one Hubpage account if it wasn't being done to just spam things. Since I wanted to do some very specific articles that I think warrant a second account, I set one up. However, I can't seem to get my adsense hooked up to the new account. Adsense thinks I've already given Hubpages permission and hubpages is still looking for that permission--for the new account.
Anyone know a way around this, or should I just start an account somewhere else for this secondary information?

All you need to do is take your AdSense ID and enter it into the My Account section of your new HP account. No need to do anything on the AdSense end.
One person can only have one Adsense account. Since you have presumably already given HubPages access to Adsense on your primary HubPages account, this should also work for any additional account. If you are experiencing difficulties with the activation, you can contact HubPages:
