Are the people living in Israel today practicing what they practiced nearly three thousand years ago? (minus the animal sacrifice)

What of the ancient Hebrew culture has been lost, recovered, and what remains unaltered?

It means it's been reconstructed based on discovered writings and traditions. E.g. Latin.
