I think empathic people in general connect better with others and empathy could certainly help a teacher better recognize and appreciate a student's learning style. Yes, I'd say your better teachers have just the right amount of empathy, not so much they get lost in others struggles, but enough to understand how different people think and react to the world around them. The teachers I remember with the most fondness connected with the students, understood how to really engage people rather than "talk at" them.
