Chicken, Avocado And Chipotle Soup Recipe
Chicken, avocado & chipotle soup.
Soups are very important part of the food. They are usually used as appetizers but can be used by those who are on diet as soups usually are very healthy and have very less calories. Also since these days we usually put lots of fibrous ingredients in the soups, so soups fills your stomach with very less calories. This soup is very tasty and children would love it as it is served with Tortilla Chips.
Ingredients:
Serves 4
1. 50 fl oz/1.6 litres/6 ¼ cups chicken stock.
2. 2-3 garlic cloves, finely chopped.
3. 1-2 dried chipotle chilies, cut into very thin strips.
4. 1 avocado lime or lemon juice, for tossing.
5. 3-5 scallions, thinly sliced.
6. 12-14 oz/350-400g cooked chicken breast meat, torn or cut into shreds or thin strips.
7. 2 tbsp chopped fresh cilantro.
8. 1 lime cut into wedges.
9. Tortilla chips to serve
Method
1.Take a large, heavy bottom pan
2.Place stock in to this pan and bring to boil.
3.Add garlic and chilies to the stock.
4.Let it boil for couple of minutes more.
5.Now cut the Avocado in to half near its pit. Remove pit with help of knife.
6.Now peel off the skin of Avocado and dice the pulp of avocado.
7.Since Avocado flesh discolors very quickly so as soon as you cut the avocado put it in lime juice.
8.Now take cooked Chicken breasts, Scallions, Avocado and Cilantro and divide in 4 equal parts.
9.Now place them in 4 different soup bowls.
10.Now pour over them the hot stock.
11.Serve them with lime wedges and few Tortilla Chips.
Tip: You have to work fast with Avocado because pulp gets discolored very quickly. Also putting them in lime juice as soon as it is cut prevents discoloration.
