Apple Oatmeal Waffles or Muffins 4pts+
I love a simple grab and go kind of breakfast. I'll make a double batch of these waffles and then freeze them. I can then easily grab one, nuke it for 30 seconds or drop in the toaster. With 3 kids, it's a great alternative for them too, instead of a pop tart, and I love that it sneaks on some whole grains... Oatmeal!

Great Grab and Go Breakfast. Omit baking powder for waffles.
Ingredients
- 1 cup(s) quick cooking rolled oats
- 1 cup(s) fat-free skim milk
- 1 egg
- 1 Tbsp vinegar
- 1/2 cup(s) unpacked brown sugar
- 1/3 cup(s) canned sweetened applesauce
- 1 1/4 cup(s) all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp table salt
- 1 tsp baking powder
- 1 small apple(s), diced
Instructions
Combine oats, milk and vinegar and allow to soak for 5 min.
Combine sugar, eggs and applesauce into oats.
Fold in fruit and flour, baking soda, baking powder, and salt.
Bake in muffins for 20 minutes at 400 degrees or in waffle iron.
