Cuban Ham & Egg Melt Breakfast Sandwich
The Cuban Sandwich It Isn't Just For Lunch!
I was inspired to make this Breakfast Sandwich after having my favorite meal at Ihop the Ham & Egg Melt. It is a great sandwich that I enjoy any time of the day. I think that you will enjoy this one even more, because instead of the Texas toast bread you use a Cuban or French type of bread about the width of your arm and grilled to perfection (by yourself of course)! After it is grilled feel free to add Chipotle mustard or mayo and or pickles. And serve it strait up or with French fries or hash browns! I used pans to press it with because I know everyone has pans, if you prefer to use a grill press remember that a true Cuban sandwich has no grill marks, so use a flat grill press or don't call it a Cuban! The Bread is Key, not too big and round and not too small. You are looking for about the average submarine sized bread ( about as round as most people's arms). I love Wheat bread and it is better for you, but a white Cuban of French Baguette is what you want because it grills up so much better!
Ingredients
1 six inch to 8 inch Cuban or French Baguette cut in half
2 slices American & 2 slices Swiss Cheese
1/8 to 1/4 lb of deli Ham sliced thick ( can substitute 2 cooked sausage patties or 4 strips of cooked beacon or Vegetarians can add sauted Portabella mushrooms).
2 eggs scrambled
salt & pepper to taste
Butter non-stick spray
Directions
Cut off a six to eight inch piece of bread then cut it horizontally in half sandwich style. Lay a 2 slice layer of Swiss followed by a 2 slice layer of american cheese. On the other side lay your ham slices. Spay a pan with non-stick butter flavored spray. Beat two eggs Scramble them on medium heat, take care not to over work them only turn them about 2 or 3 times. When eggs are done and (still in one piece) put in the middle of the sandwich and spray one side of the bread and put it on the bottom and turn the heat to medium. Place another pan on top and apply steady pressure (not too much or egg will pop out)! Then place a heavy pan on top to maintain the pressure. After 2 or so minutes and it is nicely toasted, spray the top of the sandwich well with butter spray and flip it press down and then apply heavy pan. When done wait a minute or two and then cut in half using diagonal cuts (makes it easier to eat and looks professional)! This sandwich is great because it has only 5 ingredients and can be made in about 15 minutes, you can feed one or an army!
