This soup is healthy and easy to make! We love soups in our family when it is cold and damp outside. The crock pot serves as an easy vehicle for food preparation. My husband works at home and loves to smell dinner simmering all day! To start your soup, cut up an onion and several stalks of celery for your soup! Dump these veggies into your crock pot. I purchased a chicken from the deli for my soup, the easy thing to do. You can also boil a chicken for some extra good eating! To procede with the deli chicken, remove the skin. Pull off the legs and remove the meat, cutting into small pieces. When that is finished, remove the white meat and dice it for your soup. Dump it into your crock pot on top of your vegetables.

Finishing Up
Your basic ingredients are in place. You have the veggies and chicken in the pot. Open one can of chicken condensed soup and one of chicken broth. These should be small cans. Dump the two cans into the slow cooker along with three or four cans of water! I added frozen green peas to my soup mixture. Feel free to add peas or green beans or any other vegetable(s) you like. Another ingredient needed is rice. I measured a full cup of regular rice for my soup. Finally, add pepper. We like pepper around our house, so I added two doses for good measure!
Mix your ingredients well and start your crock pot on high. Since the meat is precooked, the soup could cook on low ALL day. To me, the flavor is better when the cooker has been on a higher temperature for awhile.
It is Christmas eve and very cold in Texas! The chilly winds are blowing. I think warm soup will hit the spot tonight! I will add some blueberry muffins as a side! Happy eating!
