Vegan Almond Cupcakes
This is a delicious vegan recipe. This cupcake recipe has no eggs and no dairy products. Yet, the cupcakes are light, fluffy and delicious.

Ingredients
- 3 cups self rising flour, sifted
- 2 cups granulated sugar, sifted
- 2 cups almond milk
- 3/4 cup canola or vegetable oil
- 2 tsp almond extract
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions:
- In a bowl, combine flour and baking powder. Mix well.
- In a large mixing bowl, beat sugar, oil and the almond and vanilla extracts.
- Alternately, add the flour and almond milk to the mixing bowl, beginning and ending with the flour. Mix until combined. Do not overwork the batter.
- Line cupcake pans with cupcake liners. Fill the cupcakes about 2/3 full. Bake in a 350 preheated oven for 13 to 15 minutes, until a toothpick tester comes out clean. Let the cupcakes cool completely before frosting.
Chocolate Frosting
Ingredients:
- 1/2 cup vegetable shortening, room temperature
- 1/2 cup nonhydrogenated margarine, room temperature
- 3 1/2 cups powdered sugar, sifted
- 6 tbs almond milk
- 1 tsp vanilla extract
- 1 cup unsweetened cocoa
Instructions:
- Beat the shortening and margarine together. Add the sugar and cocoa, beat for about 2 more minutes until well combined. Add the vanilla extract and almond milk and beat until the frosting is light and fluffy. If you want a softer consistency, add more almond milk.
- Garnish the frosted cupcakes with chocolate shavings, toasted slivered or chopped almonds or chocolate jimmies.
Almond Frosting
Ingredients:
- 1/2 cup vegetable shortening, room temperature
- 1/2 cup nonhydrogenated margarine, room temperature
- 3 cups powdered sugar, sifted
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 almond extract
Instructions:
- In a mixing bowl, beat the shortening and margarine together. Add the sugar and beat for a couple more minutes until well combined. Add the extracts and almond milk and mix until the frosting is light and fluffy. You could add more almond milk if the frosting is too stiff.
- Garnish the frosted cupcakes with toasted slivered or chopped almonds or with your favorite sprinkles.
