Popular Pasta Salad
This pasta salad is a modification of a pasta salad that my mother used to make in the summer when it was too hot for much cooking. I took the main 3 ingrediants and made up my own version. It has been a huge favorite with the family and friends. I have made it for all kinds of get togethers over the years. It is easy to make and inexpensive too!
Ingredients
1 pound pasta (shells and large elbows are my favorites)
3 hard boiled eggs
2 cans black olives, drained (pitted large or medium)
1-2 cups good mayonaise
1 cup chopped celery
1 cup choppd green onions
1 tsp italion seasoing or marjoram or thyme
1tsp garlic powder
1 tsp parsley
1tsp paprika
1 tsp salt
dash of black pepper if you prefer
Instructions
Cook pasta according to directions, (don't overcook), drain and rince with cold water, set aside.
combine in a seperate bowl:
mayonaise, celery, green onions, seasonings.
add in the hard boiled eggs (chopped), and black olives (sliced).
Mix thoroughly.
Put the pasta in a large bowl, pour the mayonaise mixture over the pasta and combine all ingredients until well mixed.
Cover and chill for 1 - 2 hours.
I always make this pasta salad the same way because everyone likes it so much as it is (plus it is a good vegetarian dish), but if your family likes meat, this salad was originally made with tuna, and it might be good with other types of meat like chicken or ham.
