Hi Tideroll. I don't know exactly what he would have used, but a pink salt mixture (6.5% sodium nitrite and 93.5% salt) sold as insta cure or pink salt works great and is easy to use. Way way back in the day, people used saltpeper to cure meat, as it contains nitrates - maybe that is what was used...not sure.
