What is the significance of salt used in the Old Testament grain offerings?
In Leviticus 2:13, God tells the Israelites to season every grain offering with salt and mentions something about the salt of the covenant. What is the salt of the covenant?
Salt is a preservative and prevents putrefaction. Two verses earlier the offering of anything fermented was forbidden
Because salt was used not just for seasoning but also for curing agent and a perservative of meats, fish, etc. Salt was valued even above gold as a commodity.
Therefore "Salt of the Covenant" would be referring to preserving the covenant.
