    To me, seasonings are more toward items like salt & pepper (processed) and herbs are fresh (or preserved) like thyme, parsley, oregano, basil, etc.  Both enhanced flavors to cooking meat, fish, etc.

    Herbs are usually one thing. Seasonings are a mixture or combination of herbs and spices.

    Seasoning is the ingredients used to season food.  They are generally a combination of herbs, spices, seeds, salt, and pepper.   Poultry seasoning is a combination of sage, thyme, marjoram, savory, and sometimes rosemary and other herbs.   Pumpkin pie seasoning is a blend of spices, ground cinnamon, cloves, ginger and nutmeg.
