Does anyone have a recipe that makes the cooked carrot more interesting?
Roast them, glaze them, puree them with mashed potatoes.
During Thanksgiving I make glazed carrots. Using a microwaveable dish melt about 1/2 a stick of butter or margarine with some brown sugar about 1/4 c packed. Add the carrots, mix, and microwave on high about 4 minutes. Now take honey and squirt on about 2 tablespoons and add some cinnamon, or nutmeg if you like. Microwave until the carrots are tender.
If you really want to go sweet add a little maple syrup.
Roast them with honey and balsamic vinegar. You can add other veg along with them too.
I don't have an exact recipe, but I love cooked carrots with ginger. Glazing them makes them even better!
Melt some butter in a small saucepan and sprinkle in brown sugar, then add the carrots. This is one of the few ways my toddler will eat carrots.
