    What is your favorite sauce?

    Mine is the red tamarind sauce/chutney!!

    Champagne reduction sauce, basically a butter sauce with champagne reduction instead of stock.  Champagne reduction, a bunch of butter swirled in slowly so not to break, finished with a little cream right before serving.  Goes great over pan seared scallops.

    A nice white/cream garlic sauce sauce makes me happy any day of the week.

    From the family of Hollandaise. And just for the fact that with out proper training, and or guidance it's impossible. However is anyone aware that if you break a Hollandaise sauce. The best and only way i know of, well besides starting over is to start with a clean chilled s.s bowl. Add a drop or two of cold water, and while very slowly start whipping the broken sauce into the new s.s bowl.
