Why is sidework an important part of providing good customer service?
I'm assuming you are referring to the "extra" work employees of the service industry have to do complete in the course of their shift; i.e. rolling silverware, cleaning coolers, stocking butters. Part of a server's job is providing all the needs to their guests. Business owners will illicit the help from tipped employees for certain tasks to keep payroll within their budget. This allows them to offer menu prices that optimizes profits yet keeps the guests coming in, which makes the servers happy. Happy servers give great service!
