    I have an abundance of eggplant in my garden this year.  Does anyone have any good eggplant recipes?

    Some of my favorites: baba ganoush, eggplant parmesan, or just slice them thick, brush with olive oil, sprinkle basil and oregano, throw in some tomatoes, wrap with foil and grill on the BBQ!

    While I don't have any eggplant recipe hubs yet, I can direct you to a wonderful site that does!  If you haven't ever read the Pioneer Woman blog you are missing out!  Her recipes are fantastic with pictures illustrating each step!  She is my inspiration!

    one of the easiest is to grill (either whole asian eggplants, or r1/2" slices) then dirzzle olive oil & lemon juice and garlic - serve warm or cold

    Ha.  After getting bored with eggplant parm I started finding news ways to use eggplant.  I put them together and just published a hub on these different eggplant recipes this morning.  Check it out!

    This is called Brinjal in my country (India) and it is one of the staple vegetable here.

    Eggplant has very good taste if you know how to prepare and is very healthy and is good to control cholesterol. I drink the juice sometimes. Baked Eggplant 2 large eggplants ( I like to cut the eggplant night before or 3 hours before cook. I let them rest in water. Make the taste less strong) 2 onions, sliced ??large 3 cloves garlic, crushed ??1 / 2 yellow bell pepper, chopped 1 egg lightly beaten 2 cups of bread cumbers salt to taste parsley to taste Olive oil to taste Parmesan cheese Preheat oven to 375 degrees. Cut the eggplant into strips. Mix the onion, garlic and bell peppers and salt in a bow. Dip the egg plant in the egg, then in the bread cumbers. Place place on a baking sheet and cover with the veggie mix. Drizzle with a little olive oil and Parmesan cheese. Cover with aluminum foil and bake for 40 minutes.
