I wouldn't say I *love* wild salmon any more. I grew up spending my summers fishing for salmon that mom would freeze for the winter. We ate a lot of salmon. I can definately taste the difference between wild salmon and farmed salmon. The best is salmon caught out in the ocean (as opposed to stream caught). The salt water really makes a big difference in the flavor and texture of the fish. )
I'd rather have it lying tamely on the plate than thrashing wildly around. Too hard to get a fork into it otherwise.
I've had it a couple of times, and I have thought it was pretty good, but not great. We usually at it on crackers.
