I really like making lasagna in the crockpot. You don't have to boil the noodles that way and it comes out so flavorful!
Use no boil lasagne and follow the recipe on the box (with your own personal preferences). I used crushed tomatoes with basil, and a mix of mozzarella, ricotta, and parmesan, and add whatever veggies I'm in the mood for - a box of frozen spinach into the cheese mixture; mushrooms and zucchinis, or carrots. I've also made "eggplant parmesan lasagne" where the breaded eggplant is the veggie layer. The sky's the limit!
I like to use zucchini cut into long strips to make lasagna. It replaces the noodles, and a whole lot of carbs. Then, just alternate cheese (low fat of course), meat if you like and sauce. Enjoy
