Is it better to cook lean meat for a long time in a low temperature, or to cook it quickly on high?
I am dieting, and only want to cook low fat meats. Also, any marinade I use has to be low fat as well. So, is quick cook or slow cooking better if I want the meat to be moist?
Marinate and grill would be my choice, but you can also braise meat to make it tender and juicy without oil.
There is so many ways to make meat tender, like brasing, pressure cooking, poaching and on and on put the best way to me is slow roasting in the oven or smoking it nice and slow until it falls of the bone or or fork tender.
