    Mango-pineapple-ginger shrimp

    Ingredients:
    large mango
    2wedges fresh pineapple
    1lb raw jumbo shrimps
    Seasoning Salt and pepper

    Direction:
    Peal mango and pineapple then puree
    Add a little honey
    Place in a sauce pan on stove top and simmer
    Place raw shrimps in puree sauce and let them cook for 5 minutes at low flame

    Mango lassi... 
    Pieces of mango
    yogurt
    milk
    (sugar if you need it)
    Blend in a blender and drink.  Yum.  I also love a nice salty lassi, just remove mango and add salt.

    My Favourite Mango Cheesecake

    1 small packet of gelatine
    ¼ cup of water
    1 ½  cups of paneer cheese
    1 ½ ricotta cheese
    5 tblsp mango pulped up
    1 cup of double cream
    1 Mango sliced
    2 tblsp condensed milk
    ½ pack Digestive biscuits
    About 150g butter melted

    1.    Put water in a small pan and heat then sprinkle gelatine and heat gently until it all dissolves.
    2.    Combine the cheeses, pulp, milk (which needs to be sweetened condensed) and blend together preferably in a blender.
    3.    Add gelatine to mixture not to quickly.  Fold in the whipped cream (whip it first!!) and pour into a greased tin and chill until set.
    4.    Crush the digestives and add butter.  When cheesecake is semi set sprinkle the biscuit crumbs on the top quite thickly.  When completely set invert of a plate.
    5.    Eat too much and enjoy!!

    I make the World's BEST Mango chutney...... I use the recipe from my cookbook EXCEPT,.... whilest simmering the mangoes along with the spices, I add in a small bag with about 1/2 of a jalepeno pepper..... It gives the resulting chutney just a little "bite"... sort of like sharp chedder cheese..... DELICIOUS!!!!

    Black Bean Salad with Mango

    I can black beans or one cup cooked black beans
    Green onion chopped
    juice of one or two limes depending on personal preference
    1/4 cup olive or sunflower oil
    I cup of cooked rice
    I mango chopped in pieces
    1/2 tsp cumin or more to taste
    Chopped pecans or sunflower seeds or nuts of your choice
    1/2 cup of white raisins
    salt and pepper

    Quite yummy...

    I love delicious and thick homemade mango juice very much and often have it. Also I am fond of mango chutney and my mother makes it in Indian style which is indeed tantalizing! I like eating fresh mango slices along with sugared cream which is really yummy!
