What's you favorite vegetarian dish?
Which dish to you make again and again that is meat-free?
My mother and grandmother call it "Noodle Burger." Basically it's vegetarian hamburger helper. Cook a bag of egg noodles, add a can of cream of mushroom soup, a can of tomato soup, and vegetarian hamburger (often called "burger"), then mix it all together and let it cook some more. My grandmother gets fancy and adds onions and celery but my mother isn't a vegetable fan so we just eat it plain. Season to taste and it's great. You wouldn't know it was a vegetarian meal.
Hummus, multigrain pita bread and quinoa tabouli is our favorite vegetarian meal. I wrote hub on the pita bread...it's so versatile and you an use pita bread for a veggie sandwich stuffed with cucumbers, tomatoes, avocado and roasted red peppers. Dress it with balsamic vinegar and EVOO. yum!
I love ratatouille.....with tomatoes, eggplant, summer squash and zuchinni topped with butter and melted parmesean cheese. Oh yum!
