What is the best type of flour for Pasta?There are many types of flour, regular, all purpose, baking flour and so on. This question asks for a discussion of favorite flour types for making fresh, homemade pasta. Please explain why your choice is better.
I use all-purpose flour because it has enough gluten to give noodles the texture I like. I don't know if it's "better" than the other options; it's just my preference.
