    I would try mango cheesecake, blackberry-lemon mini bundt cakes or panna cotta with berries. Mango cheesecake is great for a crowd. Since it's rich, a little slice goes a long way. The mini bundt cakes are great for spring and if you tint the glaze with a little juice from the blackberries, they look so fancy on the table. Panna cotta is nice if you'd like an easy make-ahead dessert that isn't too filling.

    Somethng with chocolate! A flourless chocolate cake is nice & light. Or make a steamed Blackforest pudding: essentially a steamed pudding of chocolate sponge with dried sour cherries folded through the mix. Put a good dollop of sour cherry jam at the bottom of the pudding bowl before adding the pudding batter. Lovely with a rich chocolate sauce and cream or ice cream as well, if desired.

    Just about anything with chocolate, eggs of some sort, or Peeps.  There are a few good Hubs on here with Easter dessert recipes.  Another place to check out would be Pinterest or even Google images to check out some interesting and unique ones.

    You'll be suprised at the possibilities haha.  The one that I really like is the bird's nest made of chocolate covered pretzels with Mini Eggs on top and a Peep chick next to the eggs.  They look very cute and taste great as well.
