   What are some interesting or different ways to prepare chicken?

   I love making Asian-style food, so General Tso or Sweet and Sour chicken are big favourites for me, and pretty easy and quick to do. Chicken quesadillas or enchiladas are great too, and have the plus of being nice and versatile.
   
   If you want a chicken and veg style meal, blackened chicken is absolutely delicious and full of flavour. Good luck!

   smoking is one of my favorite techniques. You can also make a whole variety of good Mexican themed recipes (I've written hubs on a couple of them) and I agree with Emily Asian cuisine has some great options as well. Thai has some good options too (I have a recipe on coconut curry thai style kabobs as a good example of this)

   Try my favorite ... The Sitting Chicken Style . Just rubbed whole clean chicken with salt , pepper , fresh lemon juice  and then stuffed it with  lemon grass  and quartered onion  . Put it in a round baking dish in sitting position but before you put the chicken sprinkle rock salt on baking dish  put also red potato , celery ,  and carrots on side of chicken to add flavor .Roast in  160f for 40 mins. then serve .

   Try it stewed. In Puerto Rico we make it shredded "en salsa criolla" (literally means creole sauce) and use it to make lasagna-type dishes, or with pasta, with mofongo (fried mashed plantains) and so on.

   We also make it with bone'in pieces stewed with the same sofrito (onions, peppers, garlic and culantro) and potatoes,  carrots, olives, (sometimes we add beer or white wine) and season with bay leaves and a little dried oregano. I will post a hub later.
