Wash the kale and dry it between paper towel. Remove the stems down the middle, leaving the leaves. Take the leaves to cook, discard the stems.
Cook some garlic in olive oil (couple of tbsp) until it is soft. Then add some water or vegetable stock (1/2 cup) with the kale stirred in (about 1.5 pounds), cover and cook on medium to high heat for 5 minutes or less. Remove the cover and cook until liquid has evaporated. When done, add a bit of red wine vinegar or apple cider vinegar (about 2 tbsp) and some salt and pepper. Toss to coat and serve.
