Whats the best way to make ribs, best place Indy area to get them?
best way is to simmer them in salt water w/ pickling spice & vinegar for about 2 hours.
cool them slightly.
then put them into a shallow pan, layer then with bbq sauce overnight.
then grill them.
Well, I like to think I have the best grilled baby back ribs recipe on the planet, but this will work just fine for spare ribs as well.
Cook them real slow until the grill.
on the planet? jeje.
small ribs work really well like this. Beef ribs or any thick rib, need good braising.
if i may - braise the ribs in celery root, beet, onion, and whole peppercorn, with 1 or 2 bay leaves - as Mark said- SLOWLY. no more than 325 for a few hours, covered.
take it from the oven and cool to room temp, then chill overnight IN THE LIQUID. The fat will seal to keep out air and allow the ribs to marinate.
