Does anyone have a good recipe for restaurant style fried rice?
I've tried to make fried rice before, and it was a bit of a disaster. Not that it tasted bad, it just wasn't anything like restaurant fried rice. The rice was too mushy and tended to clump together. Yes, I used chilled rice, and yes I have a large wok. Does anyone have a good recipe or good advice?
I cooked fried rice few days ago and it turned out very tasty and I could say 'restaurant-style'. I thing the secret is in plenty of oil and frying.. Not most healthy thing for sure, but very tasty! As for my recipe.. Actually I found about 3 recipe in the internet, but I didn't have enough ingredients for any of them, so I did my own based in what i have. And I had shrimps, tomatoes, onions, zucchini, garlic and of course rice and eggs. I prepared 3 separate things:
1.I fried a lot of onions + a lot of garlic+chili, then put shrimps there to cook it in such sauce. I had pre-cooked shrimps, so I just let them to boil and soak in sauce a little bit and set aside.
2. I fried chopped zucchini with chopped tomatoes until ready and set aside
3. I boiled rice and added butter to ready rice. Stirred well. Butter improves the taste of rice and helps it be separate. Set aside.
Then I whisked egg, took big wok, put a lot of olive oil there + a lot of garlic again + a lot of curry powder + chili. When oil had became hot, I put rice there and let it fry a little bit to absorb oil with spices (about 5 min). Then I added remaining components (fried shrimps with onion and fried zucchini with tomatoes), and stirred well. As finish touch I added whisked egg while stirring continuously and cooked 1-2 minutes more to be sure than egg is ready.
It turned out VERY tasty! Hope it helps.
The rice was too mushy because you put too much water.
You need to make it like this : 1 cup of rice + 2 cup of water. If it's still mushy, use less water.
Usually different type of rice uses different amount of water.

Does anyone have the recipe for Cracker Barrell's Southern Fried Chicken?It is only served on Sunday's. It is boneless and skinless chicken breast. Very Yummy!
