Your body's metabolism DOES work slower during evening. Fruit and vegetables, however, are easily digested since they have less calories and carbohydrates. In fact, professional athletes are advised to eat fruit or vegetables late if they get hungry.
As far as the stomach acids are concerned, even gas might cause serious problem. Time is not a factor in this case. The body cannot separate acids that will dissolve your organs. If such thing was true you would have to have gone to the WC straight after you ate an apple, for example.
Bizzare cases do happen. If a guy can die while watching Avatar, I wouldn't be surprised at anything.
