    Grains are generally dried before storing, which gives them a longer shelf life.

    Greens are fresh hence have to be consumed quickly, while grains are dry hence can be stored for longer durations.

    I believe it's the water, which is a breeding ground for bacteria that rots the fruit/veggies. This is why dehydrating makes it last longer. Seeds, grains, and nuts, generally have much less water in them, so they don't go bad as quickly.
