Of course, a poem can be anything you like.  As long as you write from the heart your words will be magical regardless of rules and regulations!  Sorry, my opinion only, and who am I to give my opinions on poetry.  I have only been writing it for a short while!

It is ok to write a poem with any number of stanzas that you want. Poetry is an art, self-expression, not a science. As such, it is not governed by hard and fast rules. And if there seems to be a hard-and-fast rule, it was probably made to be broken.
