Because they aren't as loving and compassionate - as they fancy themselves to be (which constitutes a 'true' vegetarian).
I'm an atheist and a vegetarian. Many of my friends are atheist and vegetarian.

I'm sure you have some reliable statistics and studies to back this up.
Personally speaking, most atheists I've ever seen were like hypocritically cruel. Very nice and pleasing.
