Why do people believe that the Bible is the "word of God" if it has been countlessly re-written?
I don't think the Bible was re-written but there are numerous translations that are in existence. The original Bible was written by many people inspired by God. They were assembled into a book, the Old Testament and the New Testament. Because of language differences, some version are more easily read than others. It is a book that satisfy many purposes. The main content is irrefutable by scholars though they differ on some interpretations of passages. It is a guide for human existence and it contains many stories or parables meant for teaching moments. It is also a historical document since many of the details have been confirmed by archeology.
