Because early civilizations didn't know they existed. God left them out because He may not have felt they were relevant to the story of mankind. The bible is, after all, one big story about God's relationship with humans.
The Bible's main purpose is to reveal what God has done for humanity through Christ and the blueprint for salvation (getting into heaven). Dinosaurs have no relevance to this aim.
To provide an example by analogy, a person may open up textbooks titled, "Calculus" or "Fundamentals of Astrophysics" which also would not contain dinosaur information because that point would have to significance to the author's intent.
