Does anyone else notice that when you have written in your opinion a quite good hub, that it starts very slowly and your a bit disappointed. Likewise when you have written in your opinion a ok-ish hub it does better than you thought it might.

It's all in the keywords and niche.  Traffic varies. Sometimes you'll even find the time of year will cause a change in traffic, especially with specific season or holiday hubs.

I think hubs on health and well-being are most popular.

My 2 hubs on natural health aren't terrifically popular, even with good keywords.  They're both a good read though...see for yourself. smile
