Delicious Light Dessert Recipes: How To Make Low Calorie Buttermilk Pound Cakes
How To Make 5 Individual Buttermilk and Vanilla Pound Cakes
This is a super easy, wonderfully versatile pound cake recipe because you can make 5 individual cakes and either give as gifts, freeze, or serve each one with a different topping.
These freeze extremely well. Wrapped in colored plastic wrap tied with a delicate bow, they also make pretty hostess gifts.
Add the recipe and perhaps a homemade sauce in a decorative container.
RECIPE FOR BUTTERMILK POUND CAKES
You will need five 5-3/4 x 3-3/4 inch loaf pans.
INGREDIENTS
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups sugar
- 3/4 cup butter, softened
- 1 teaspoon vanilla
- 3 large eggs (or 3/4 cup egg substitute)
- 1-1/3 cups low-fat buttermilk
- Cooking spray
DIRECTIONS
- Preheat oven to 350.
- Spray (5) 5-3/4 x 3-3/4 inch loaf pans with cooking spray.
- Spoon flour into cup, level with knife. Combine flour, baking powder, baking soda and salt. Whisk together.
- Place butter, sugar, and vanilla in large bowl or put in mixer bowl. Beat with mixer at medium speed until light and fluffy.
- Add the eggs, 1 at a time, beating well after each addition.
- Add flour mixture and buttermilk to sugar mixture alternating – begin and end with flour mixture.
- Spoon the batter into 5 pans – bake at 350 for 40 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes in pans on wire rack.
- Remove from pans.
- Cool completely on rack.
This recipe makes 5 loaves, 6 servings each.
144 calories per slice.
Tips On Baking Mini Pound Cakes
- If you use pans that are not the size specified above, check sooner than the time given.
- Check for doneness by inserting a toothpick to make sure they are done.
- Pound cakes are generally kept very simple but you can poke holes in with a cake tester and then drizzle a thin icing or a liqueur over them for a simple topping. The flavor of pound cake though needs to come through and not be overwhelmed by toppings so keep it light!
- Pound cakes make an excellent way to serve strawberry shortcake.
- Try some of the variations out there such as pumpkin pound cake or chocolate chip pound cake.
- Try some of the various Bundt pans and be creative in your presentation. Just remember to always check for doneness if using a different sized pan - with a cake tester or a toothpick.
