Quilting helps me to relax. It's just hard to find time to actually quilt.
I used to be super crafty. I've crocheted, cross stitched, made clothes, done embroidery, quilted. I haven't done anything for a long time until I found out my youngest daughter (21) is expecting!! So, together, we started a scrap book to track her pregnancy and will carry it over to make a baby book out of it.
Sketching (graphite, pastel)
Painting (acrylics, oil, water color, pencil)
Digital media (creating, editing, publishing)
lots more.... but just don't have the time to do them
To ease stress I like to knit. I enjoy simple projects so I can unwind completely.

It may not be a craft, but writing will certainly allow you accomplish that.
I love to paint, I love to illustrate and I love to draw. The use of the hand to depict images is an amazing experience. Everyone can practice drawing images and doing "art therapy" every day!
I also love to design jewelry. I go to thrift stores and pick up old necklaces, bracelets for really cheap, break them apart and design away! Get a set of tools and a How-To book and anyone can design and create their own necklaces, bracelets and earrings.
Junk Art...I know I'm usually a smart ass on the forums but this is serious.I love to make sculptural presentations that involve junk sculpture,water,electricity and plants...
So many! But I've been so busy I haven't had time for any of it!
