I would imagine that you are referring to "tags", not "keywords" as we do not add keywords to the hubs. Google sees every word in the title, sub-titles and the hub itself as keywords.
To add tags or change tags, click edit on the hub, then look over to the right. As you look down, you will see the options:
reorder tags settings summary group
Click "tags" and there you can make the changes.
Tags are used only within HubPages for related hubs and such to show up on your hub.
