I can't pick just one, but it would be a tossup between Lo, How a Rose E'er Blooming" and "O Holy Night."

Fairy Tale of New York by the Pogues -

With a fabulous melody and a sing-a-long chorus, I doubt any other song captures the spirit of modern Christmases like this one - the happiness, joy and party atmosphere, the icy cold, the Bells AND the sense of loneliness, alienation and darkness that the season brings to many people... and yet it still ends on a note of stubborn optimism... this song is almost a hymn.
