I would consider them superheroes, on the condition that they stand outside the mundane paradigm of that universe, and have access to supernatural powers that few can or are able to tap into. They have also made the decision to use their abilities for the betterment of the universe.
Based on the definition of a superhero, yes, they would qualify. They've got the powers, the moral code, and the neat gadgets. But personally, I think it would be more accurate to call them space wizards. The force is essentially magic that all jedi/sith can tap into with proper training. The more they train, the more powerful each spell becomes and/or the more spells they learn. Which makes it different than superheroes whose powers are constants, not continually evolving (in most cases).
