Mushroom and Chicken soup.
Mushrooms are my favorite. You can literally add them to any dish or soup. Mushrooms are easily available all over the world. They are cheap and healthy and easy to digest and lend great taste to the dish. Mushrooms should be washed thoroughly before they are used.
1. Dried mushrooms: 25 grams or 1 oz ( any kind though I like white button )
2. Water: 4 cups/ 1 liter/ 32 fl. Oz.
3. Mushrooms: 100 grams / 4 oz. sliced
4. Vegetable oil / peanut oil: 2 Tsp
5. Galangal: Fresh, 2 inch piece finely chopped.
6. Garlic: 2 cloves chopped
7. Chicken breasts: 2 with bones and skin.
8. White mushrooms: 200 grams / 8 oz. cut in to 4 pieces
9. Lemon Juice: ½ Lemons
10. Fresh Parsley for garnishing.
1. Take a small Bowl.
2. Place dried mushroom in the bowl.
3. Pour hot water enough in bowl to cover the dried mushrooms.
4. Let them soak in hot water for about 30 minutes.
5. Drain the mushrooms and keep the water aside.
6. Now discard the stalks of Mushrooms and cut the caps in to small pieces.
7. Now take 4 cups of water in a large pan and add the water used for soaking the mushrooms.
8. Bring this water to boil and simmer the heat.
9. Now add chicken breasts in this boiling water and let it simmer for 15 minutes.
10. Now remove chicken and peel off skin.
11. Also remove chicken meat from the bones and slice it and keep aside.
12. Now add the peeled skin and bones to the hot water and let it simmer for another 30 minutes.
13. Now remove the hot stock from heat and strain the stock through a fine strainer in to a clean pan.
14. Now bring it again to boil and add white mushrooms sliced chicken and lime juice.
15. Now in another pan heat the oil and stir fry the soaked mushrooms with sliced mushrooms. Galangal and garlic for 4 minutes.
16. Add this to the boiling stock and boil for simmer it for 10 minutes
17. Now soup is ready.
18. Pour it in to soup Bowls.
19. Garnish with parsley.
20. Serve Hot.
