I have a black bean soup recipe:
2 Tbsp oil
1/2 cup Onions
1/2 cup Ham
1/2 cup Squash
1/2 cup Tomatoes
1/2 cup of each color Pepper
1/2 cup Pickled Cactus-(Doña Maria-Napalitos-tender cactus)
1 to 2 cans of Black Beans
8 oz of Pepper Jack Cheese( spicy)
Salt to taste( optional)
1) Cut all vegetables and ham in small squares.
2) Stir fry with the oil first the onions until clear, then ham, then squash, tomatoes, peppers, pickled cactus.
3) Stirring constantly.
4) Then the Black beans.
5) Let cook 15 min or until done.
6) Final step the pepper jack cheese in squares let Melt.
7) Then Serve.
Put cheese to taste depends how spicy you want it. If it’s too thick for you add a cup of water and cook to desired consistency
You can have bread, tostones, tortilla, or corn sticks on the side!
