As many of you know tofu is actually soybean curd which is bland in flavor. It is kept in water and stored in the refrigerator just before use. When planning to use tofu for a meal, please drain it before preparing it. This healthy staple can be a substitute when cutting down on the consumption of meat. I have been preparing and eating tofu, which has its origin from Asia, for at least 35 years. If food preparation time is limited, firm tofu can be cut up and placed in soup.
