I was just wondering if any vegans out there had a favourite vegan recipe?
Mine is currently vegan Yorkshire puddings, love those things!!
vegan pancakes
3 cups flour
1/2 cup brown sugar
1/2 cup sugar
2 tsp baking powder
dash of salt ( to tame sugar a little)
cinnamon (optional)
1 tsp french van extract (optional)
3/4 cup canola oil
2 cups water (more or less depending on the thickness desired)
Lightly grease the frying pan or griddle and wait until hot then pour desired amount on pan. Cook like regular pancakes. We also would use pumpkin pie filling from the can and pumpkin spice and they were amazingly delicious also. This recipe also makes great muffins.

Honestly I love plain old vegan brownies, but they can be dry very easily. I'm looking on how to modify an old recipie for cranberry crunch, it may be online but I'm digging through old cookbooks now.
I don't have a recipe for vegan brownies- would love one!
Here is one of my fav vegan dishes- Veg Chili
1 can black bean soup
1(15oz) can kidney beans,rinsed and drained
1 (15 oz)can white beans
1(16oz)can baked beans(vegetarian)
1 8oz can crushed tomatoes
1 15oz can whole corn kernels
1 onion, chopped
2 celery stalks,chopped
2 cloves garlic,chopped
1 Tablespoon chili powder
1 Tablespoon dried parsley
1 Tablespoon dried oregano
1 Tablespoon dried basil
Add in order to slow cooker, give stir and cook 2hr on high.
or
Add to dutch oven and heat med till it begins to bubble-reduce heat to low,simmer for 40 minutes.
Notes:
--Once, I couldn't find black bean soup so I used black beans and it was fine.
--You can use italian seasoning to substitute the parsley,oregano and basil. But use only 2 Tablespoons.
--It makes great leftovers the next day after the flavors have cured but doesn't freeze well.

For vegatarian, tofu will be your friend. Because this ingredient is incredibly all-round and can be used in just about any vegetarian recipes that you find. I post a video on my first hub, you can have a look if you like, at: Tofu & Veggie Stir Fry
One of the simplest thinga I love is tomato and hazelnut balls. Mix chopped hazlenuts and breadcrumbs together then add a tin of chopped tomatoes and mix up until it starts to hold together.
Form it into small balls and cook in the oven just until it's warmed up. This is great with sauted mushrooms and onions.
My favorite veg dish is the spicy indian dish Vegetable Korma
cooking time is just 20 mins.Its simply delicious.
Ingredients
150g/5oz fine green beans, trimmed and chopped
1.25ml/¼tsp mustard seeds
100g/3½oz carrots, peeled and sliced
1 tspn of garam masala (a blend of different spices peppercorns, cloves, bay leaves, cumin seeds, cinnamon, black, brown & green cardamum, nutmeg, mace, star anise and coriander seeds)this is an essential ingredient to making curry dishes. you can combine teh spices to make your own, or buy ready made packest from your local asian market.
55-80g/2-3oz potatoes, parboiled and chopped
1.25ml/¼tsp cumin powder
25g/1oz garden peas, frozen or fresh
1 tsp coriander powder
1 small onion, peeled and chopped
2 tbsp creamed coconut
½ green chilli, chopped (add chilli accoring to your preference, if you like it hot add more, if not then add less).
3 tbsp oil
2.5cm/1in piece fresh ginger, peeled and grated
1 clove fresh garlic, peeled and chopped
salt to taste
1. Heat the oil in a pan on a medium heat setting.
2. To check that the oil is hot enough, sprinkle in a few mustard seeds, if they pop the oil is ready. Then add the remainder of the mustard seeds and the onion.
3. Fry for a couple of minutes, then add the chill, garlic and ginger and fry for 1 minute.
4. Add the garam masala, salt, cumin and coriander powder to the frying mixture for a further minute.
5. Add the carrots, then 2 minutes later, the beans then after another 2 minutes add the peas.
6. Stir fry for another minute and finally add the potatoes. Stir for a further minute.
7. Mix in the coconut and 300ml/10fl oz of hot water. Cover with a lid and simmer on very low heat for about 5 minutes or until the sauce is fairly thick. The korma should be medium brown in colour.
serve with Basmati or white rice or with flat breads.

My favorite way to prepare vegan is to just throw them on a spit and slowly roast them for several hours.
My favorite has to be lentil pie. My hub version is not completely vegan, but it can be adapted to be. Just substitute milk for soya milk, eggs with egg substitute and omit the meat (or use baked salmon). It's healthy, hearty and all ages love it.

This is not a recipe, but I thought I'd mention (in case anyone doesn't realize this) that Oreo cookies are vegan. (Who needs a recipe when good ole' Oreos are vegan? (Brownies: My daughter makes her vegan brownies with applesauce and/or applesauce and bananas.)
