This is not a recipe as such; but, I find this meal to be very satisfying. I take a roasting pan and melt some coconut oil in it. While I am preparing the vegetables, I place the roaster over a low heat on the stove and lightly fry my spices in it. I always add a small red chili pepper, salt, and pepper. I add my other spices depending on the vegetables. Then I add my vegetables and coat them in the oil. Into the oven at 350 degrees for about 1/2 hour or so. About halfway through the cooking I add garlic cloves just because I love cooked garlic.
When it is all cooked, it is the most delicious meal. Don't forget to turn your veggies when you add the garlic for even coating and cooking.
Tofu scramble. It's seasoned/fried tofu strips combined with green peppers and onions. It's a fantastic substitute for eggs at breakfast time. I detailed it in an article I wrote a short while back:
