I grind my own wheat from either hard white wheat, soft white wheat, or hard red wheat.
Which one of these flours should I use to make bagels?
I am not sure. Do you know which of these flours is highest in gluten? If you do, use that one, flour for bagels should be a very strong high gluten flour.
