What are the best vegetables for roasting?
I'm on a mission to become a good cook, and in connection with that mission I recently roasted my first chicken. I roasted carrots, onions, fennel and potatoes with the chicken. The carrots and onions turned out great. I'm not sure I'm sold on fennel, and the potatoes were a little bit hard. I'm looking for alternatives. What other vegetables do you recommend for roasting? The more delicious, the better.
Red/orange/yellow peppers! Just leave them on the grill over medium high heat for a long time (1/2 hr or so) turning occasionally until skin is blistered and charred. Scrap off the blistered skin and peel the rest of the skin (it will peel right off). Cut it into pieces and enjoy!
I also like corn on the cob on the grill. It can be done in or out of the casing.
cor is great but u must wrap it in foil, also green and yellow zucchini with a little paprika pepper and sea salt tossed in some olive oil and roasted on the grill is amazing
if you never tried... try to roast eggplant and tomato together.. then do a balsamic reduction in a pan next to the veggies... toss the veggies with some sea salt and serve with the balsamic reduction and fresh mozzarella cheese.. yummi yummi!!!!
i gotta go with a mixed veggie option. Mixed vegetables is the best choice because you can have a combination of your favorites.
I really like to use Garlic with zucchini, yellow squash, Red Onion and Cherry Tomatoes. About 10 min (5 min on both sides) to give a nice smoky flavor. You can garnish your plate with thin slices of Avocado too, which helps the flavor of the other vegetables meld together when you serve them up.
I think the best vegetables for roasting are: carrots,red potatoes, Onions, turnips, peppers, and squash( yellow or green). And don't forget the whole cloves of garlic.
I love roasted corn, bell peppers, and tomatoes. You can also make salsa by roasting or grilling tomatoes and peppers.
Peppers come to mind first. All root veggies, asparagus, cauliflower, corn, squash, zucchinis,..........use your imagination...it is how great foods are born.

Fennel is way too strong and will over power the rest of the veggies. Try roots and tubers such as parsnips, burdock and daikon. These, like the potatoes, will need to be boiled for a bit prior to roasting.
You can slice potatoes thinner next time so that it cooks well. Potatoes should taste great when roasted actually!! ... You can also try to add capsicum and tomatoes..
