Do you have a recipe you would be willing to share for the dessert, carrot pudding?
A friend and I just had lunch at an Indian buffet, and carrot pudding was one of the desserts. It seemed to contain jasmine rice along with the grated carrot, and the creamy topping reminded us both of sweetened condensed milk.
I've just posted a hub for the Nepalese dish, gajar ko halwa, or carrot pudding.
I hope this is what you're looking for.
You can see my hub about preparing carrot halwa. You can still prepare it instead of pudding.
It is easy for me to redirect you to that hub rather than writing the whole recipe.
