    How do I reduce liquid in fig jam? It wont set up and is too runny.

    Made a large amount of fig jam and followed diections on boxed pectin.  It will not firm up.  Can I reheat and let moisture boil out without really ruining the jam?

    Problems with getting jam to set are usually caused by three things - not enough pectin or not enough sugar, or you've put too much water in the pan.

    The solution is to empty the jars of unset jam back into a clean pan and bring back to the boil and let the contents boil for a while until you see the liquid is reduced.  Use the cold plate technique to test to see if the jam's set enough.  Usually this will fix it.
